Whole Wheat Breakfast Muffins

1 cup old-fashioned rolled oats

1 cup unsweetened applesauce

½ cup milk of choice

1 large egg

1 tsp vanilla extract

4 tbsp coconut oil, melted

1/3 cup sugar

1 cup whole wheat flour

2-3 scoops Obvi Collagen Protein Powder, Honey O’s Flavor

1 tsp baking powder

½ tsp baking soda

½ tsp cinnamon

1 pinch salt



Preheat oven to 375F. Line a cupcake tin with liners and set aside.

In a medium bowl, whisk together oats, applesauce, milk, egg, vanilla, coconut oil and sugar. In a larger bowl, mix flour, collagen powder, baking powder, baking soda, cinnamon and salt. Stir wet ingredients in with the dry ingredients. Spoon the batter evenly into the muffin liners. Bake for 15-18 minutes or until cooked through and edges are slightly browned. Enjoy warm!
