Makes 16-18 Small Cookies
INGREDIENTS
1 ½ cups old fashioned oats
½ cup flour or 1:1 gluten free flour
2-3 scoops Obvi Protein and Collagen Powder, Peanut Butter Cups Flavor
½ tsp baking soda
1 pinch salt
½ tsp cinnamon
½ cup unsalted butter, room temperature
½ cup creamy or crunchy peanut butter
¼ cup coconut sugar
1 large egg
1 tsp vanilla extract
INSTRUCTIONS
Preheat oven to 350F and line two baking sheets with parchment paper. In a larger bowl, mix together oats, flour, Obvi powder, baking soda, salt and cinnamon.
In a stand mixer with a whisk attachment, add butter, peanut butter and sugar and mix until combined. Add in egg and vanilla and mix again. With the mixer running on low, slowly add in the dry ingredients until batter comes together (it will be sticky). Use clean hands to form into small balls and place 2 inches apart on baking sheets. Bake for 10-12 minutes or until edges begin to turn golden brown and center is still soft.
