INGREDIENTS
1 ¼ cups flour or 1:1 gluten-free flour
2-3 scoops Obvi Protein and Collagen Powder, Chocolate Chip Flavor
1 tsp baking powder
½ tsp baking soda
½ cup unsalted butter, softened
¼ cup brown sugar
1 egg
¾ cup yogurt
1 cup zucchini, shredded and drained of moisture
¾ cups chocolate chips
INSTRUCTIONS
Preheat oven to 400F. Line a muffin tin with 12 liners and set aside. In a medium bowl whisk flour, collagen powder, baking powder, and baking soda together. In a stand mixer with a paddle attachment, cream together butter and brown sugar for 2 minutes. Add in egg and mix again until combined. Add yogurt and mix until creamy. Slowly add in dry ingredients about ½ cup at a time until incorporated. Stir in zucchini and chocolate chips then scoop batter into muffin liners until full. Bake for 18-19 minutes or until toothpick comes out clean.
