Pumpkin Latte Waffles

 

 

Serves 4

 

INGREDIENTS

1 ÂĽ cup all-purpose flour

1-2 scoops Obvi Protein Collagen Powder, Caramel Macchiato

1 tsp baking powder

1 tsp baking soda

½ tbsp ground cinnamon

1 pinch kosher salt

1 cup canned pumpkin puree

2 eggs

3 tbsp butter, melted

ÂĽ cp brown sugar or coconut sugar

1 cup milk of choice

 

INSTRUCTIONS

Mix flour, collagen powder, baking powder, baking soda, cinnamon and salt in a medium bowl and set aside. In a large bowl, whisk together pumpkin puree with eggs, butter and sugar until smooth. Sit in milk until combined. Mix dry ingredients in with wet ingredients just until combined, do not over mix. Heat up waffle iron and add batter, about ÂĽ cup at a time until cooked. Serve with coconut whipped cream, crushed pecans and maple syrup.Â
