1/3 cup coconut oil
½ cup brown sugar
2 tsp espresso powder or instant coffee
2-3 scoops Obvi Collagen Protein Powder, Caramel Macchiato Flavor
1 tsp salt
¼ cup cocoa powder
1 ¼ cup almond flour
½ cups chocolate chips
Whisk eggs with melted coconut oil and sugars in a large bowl. In a separate bowl whisk espresso powder with Obvi Collagen Powder, salt, cocoa powder and almond flour. Fold dry ingredients into wet then stir in ¼ cup chocolate chips. Chill dough for 15 minutes in the refrigerator.
Preheat oven to 350F. Line a baking sheet with parchment paper. Roll cookie dough into balls then add additional chocolate chips to the top. Bake for 15 minutes then let cool on a wire rack.
Can you substitute all-purpose flour for the almond flour? What would be the ratio?
