Cranberry Cinnamon Oatmeal Cookies

 

 

Makes 10 cookies

 

INGREDIENTS

1 cup all purpose flour or 1:1 gluten-free flour

2 scoops Obvi Collagen Protein Powder, Cinna Cereal Flavor

½ tsp baking soda

ÂĽ tsp baking powder

½ tsp ground cinnamon

½ cup unsalted butter, softened

ÂĽ cup coconut sugar

ÂĽ cup light brown sugar

1 egg

1 tsp vanilla extract

1 ½ cup old fashioned oats

1 cup dried cranberries

 

INSTRUCTIONS

Preheat oven to 375F. In a small bowl whisk flour, collagen powder, baking soda, baking powder and cinnamon and set aside. In a stand mixer fitted with paddle attachment, add softened butter, coconut sugar and brown sugar until combined. Add egg and vanilla extract until mixed. Slowly add in dry ingredients then oats. Stir in dried cranberries. Line two baking sheets with parchment paper. Roll dough into 2 tbsp balls with clean hands then flatten slightly on the parchment paper. Bake for 7-9 minutes or until edges are browned.Â
